I love comfort food…savoury, feel-good, satiety-filling, comfort food. For me, that dish has been creamy, cheesy, Chicken Broccoli and Cheese Rice.
Even if the chicken was not available, the Broccoli and Cheese combination just won me over. For years, it’s been my go-to whenever ordering at WhiteSpot restaurants (if you don’t know what I’m talking about, I feel like you have been missing out). If it was a rainy day, forget it, that is about all I want!
Fast forward to now, I am being a lot more conscious of the amount of rice I consume. I am not negating it, it’s still a staple in Indian culture, however, I try not to make that our major meal starch more than once or twice a week. It’s also part of the need to create variety in mine and my children’s diet that I don’t want to rely on eating rice daily. Furthermore, I truly want to find ways to make the high-fat foods I love a tad lower fat (just a personal preference).
Recently my husband took to cauliflower rice, which took me a while to adapt to. You see, I love vegetables but never warmed up to cauliflower. However, and a big however friends, cauliflower rice is…amazing!
So to avoid having to really alter my comfort food cravings, I decided to adapt the broccoli cheese rice recipe I love and convert it into cauliflower broccoli cheese rice. Another type of CBC (in the past the C stood for chicken, yes I’m trying to be plant-based one to two days of the week as well).
The healthy version has won me over and I want to share with you CBC lovers!
Grated Cauliflower or Frozen Cauliflower Rice
1tsp curry powder
1 tsp olive oil
Salt and pepper to taste
Sautee all these ingredients until the cauliflower looks and feels a bit stiffer and takes a rice consistency.
Add grated Broccoli
Add low-fat mozzarella cheese
Mix and cook until fully coated and the Broccoli looks cooked. Bake for few minutes until golden (optional).
Serve and eat hot.
