Every so often I come across a new BC wine that I am not familiar with and can't wait for an excuse to try!

When I was browsing in my @winebcdotcom app, I was suggested the @jacksontriggs Grand Reserve White Meritage. I've never sampled a white meritage before, and didn't know what to expect...so why not? I love how my BC Wine Explorer app knows me so well to suggest new wines that I should try. It's hard to sometimes pick out something new on your own and recommendations are always welcomed. Honestly, this app feels like I have a personal professional Sommelier that knows my tastes, right on my phone! 

For me, discovering new varietals here is a  #BCWineGoal of mine. Comparatively, for a small wine region, it's incredible how varied the grape options are here! I learned that there are more than 80 varietals planted all across BC wine country and each has a unique character, which again fuels my curiosity! So much to try!

There is always something delicious and exciting to try in BC wine country. We are so very lucky to live here.

By the way, this Grand Reserve White Meritage hit the mark. This app definitely knows what I like!

Sula. Suffices to say that when @sulaindianresta Sula. 

Suffices to say that when @sulaindianrestaurant announced they were coming to Main Street, we were pretty excited. One of our fave Indian food places right in the neighborhood. 

Pick-up, but still enjoyed every last drop. Oh the Shahi paneer was 👌🏽I definitely also recommend getting one of their Chaat platters, a perfect harmony of spices and I enjoyed the soft pillowy insides of the samosas and pakoras.

Make time to unwind. Getting back into the regula Make time to unwind.

Getting back into the regular groove of school, work, safe activities, and all your new year goals can make for a hectic and tiring week. This is especially true after taking a little time off. 

While I was excited to get back to a structured schedule, I knew there was a lot of work to do, with new deadlines and commitments while trying to meet all my team and individual goals. It wasn't easy but I thankfully got myself organized and made it! Woohoo! 

Now it's #Friday and it's time to unwind and reward myself. 

My favourite way to wind down is definitely enjoying a nice glass of BC VQA Wine (love my BC wines in case you didn't realize) and today I'm going to savour this See Ya Later 2019 Ping Meritage (a red blend from @sylranchwinery )It's the perfect red to reward hard work, but also perfect to pair with a hearty dinner. Takeout or homemade? 

If you have been following me for some time you know I do love to eat out locally, and takeout. However the past year I have been sharing recipes and homemade stuff a lot more too (I suppose we all have). 

Very often I forget to take that perfect shot to share until I have devoured half the dish, or make something that was unintentionally really good and think....I should have shared that and documented the steps. 

Either way, it reminds me of why I like this space. I get to talk about one of my favourite subjects...food! 

I think it will be fun to play this game every once in a while.

Fueled? Fueled. Every year, I find that the start Fueled? Fueled.

Every year, I find that the start of January IG is flooded with goals, goal planning, and ambitious ideas about goals for the new year. Whether it's business, personal, or health. Myself included! 

In fact, it's a perfect time to reset, re-evaluate, and set our intentions for whatever it is that we want to achieve. Having said that, this year, I personally haven't changed my goals a lot. In fact, I'm trying to stay on top of ones I committed to and instead finding a way to stay fueled instead.

Sometimes when you go full force in January, we lose steam before winter even ends...I know I have. How can this year be different? 

I'm setting an intention to practice more of what fuels me: writing, time for self-care and exercise, and yes...really good coffee and food.

Appreciation. This Christmas, things were quiet, Appreciation. 

This Christmas, things were quiet, things were slower, things were definitely different. While it was approached with disappointment, it didn't leave disappointing. 

There is so much joy and blessings and things to be grateful for all around us. Time with our children being one of the biggest, living in a gorgeous province another, and having loved ones that put in effort to connect (whether virtually or via drop offs of presents and goodies) made for joy to grow vs diminish. It actually showed me that nothing can diminish your joy, you are in charge of that. 

Getting out to play, or chilling out and taking some time off, or having a meaningful heart to heart with someone vs just being in a rush to get to the next thing...that change of pace was much needed for me I think. 

I appreciate all the beautiful things around and people I have in my life. 

Now that's a gift. 

One that I have truly learned to appreciate. 

I wish you all are taking time to take care of yourselves, giving yourself some love and downtime if that is what you need.

Cocoa Cashew Bark. Instead of a chocolate bark, Cocoa Cashew Bark. 

Instead of a chocolate bark, I wanted to create something using some nuts (which I happen to have a lot of). 

This is kind of a happy accident (it happens often with me), where a cup of cashews resulted in a holiday treat that is a cross between a really thin burfi sweet and an al dente bark. 

Make this bark for the holidays, package as part of a treat box, or keep in the fridge for you to enjoy as a sweet treat. It's perfectly nutty, but softer than a brittle...and the hint of cocoa makes this sing for me. 

Are you a cashew fan? If not, this recipe can be done with other nuts as well.

Hey weekend/holiday break! Going into the weeken Hey weekend/holiday break! 

Going into the weekend NOT full of break activities in mind. I have some in mind, including a lot of movies, cocoa and cuddles. 

This is soooo rare for this time of year, not having to rush, get ready for things, make certain times and get a number of outfits prepped (clearly...I mean how often do you see me in a beanie). 

While I have a few ideas to do with the kids, I may not get to it all....and it's ok. It really is. This year I didn't have my massive things to do list, and must sees, I didn't try to get them all documented as I normally do, and instead tried to just make sure I am "present" which feels pretty good. Going with the flow is not something I am not always good at, but  yes...sometimes you have to just let go and let be. 

Having said that, I think we will do a bit of baking. In fact, I have some ideas if you want to:
- cocoa cashew bark (on the blog)
- peppermint cheesecake (on the blog)
- oatmeal cookies (yup, on the blog) 
- churros popcorn (...on the blogaroni)
- chocolate oat bars (you get the point)

Even if you are not baking or making a thing, it's ok! Make sure you take time to enjoy what this rare "slow down" period looks like.

Whoa burger! In the year of the fried chicken cr Whoa burger! 

In the year of the fried chicken craze, I mean it seems a lot more around than before, we had tried some items from @thefryingpan604 . This wasn't the first time, I mean if you know, you know their food truck is a sought after chicken spot (and their bowls are good too). Now they have a location open in Gastown and I gave in and had to try the burger and the fully loaded fries. 

Um...ahhhhhmazing. 

While I couldn't finish it all in one go, it was definitely living up to the hype.

Actually, instant pot soup with sausage & rotini. 

A perfect warming soup for cold weather, that you can make in a hurry! Dust off the instant pot, this soup is worth it.  To be honest, I haven't been using my instant pot a whole lot. However sometimes soup in a hurry is what we all need. Still it doesn't have to always be instant noodles (yes I have them in my pantry too) but don't want that to be our go to.

While I always have some type of pasta and broth on hand, as well as tomatoes...I realized that a quick soup was possible and wouldn't compromise taste.

Holiday state of mind. Taking a break to just en Holiday state of mind. 

Taking a break to just enjoy the beautiful things that are Christmas. Different or not, it's still nice to see the decorated themes around the city. 

It creates a sense of magic or cheer. Even a simple tree in the middle of downtown. 

To be honest, I haven't missed the crazy hustle and bustle. When people are fighting over parking spots, overbooked each night, or scrambling in general. It's really shown me that it's the people I miss, not the "things" and that the overall joy....well it's all there if you look. Maybe...just maybe...some of us needed that reminder.

If you really slow down and look for and appreciate love and joy.

Aw nuts! Roasted that is. Get ready here comes Aw nuts! 

Roasted that is. 

Get ready here comes another uber nutritious, easy,  and delicious snack. 

All you do is:

1. Grab handfuls of raw nuts and seeds of your choice. I chose almonds, cashews and pumpkin seeds.

2. In a bowl mix in with 2 tbsp extra virgin olive oil, 1 tsp Monk fruit sweetener (or if you are ok with sugar use honey or syrup). Mix well, massage even. 

3. Spread across a cookie sheet and roast for 30 min. at 325. 

4. You may want to check at the halfway point and mix it around. 

Tip: once the time is up, test to crunch, if you want it crunchier put it in for another 10min. 

5. Let cool, then sprinkle with a touch of salt. 

Store in a glass jar and snack away! 

It's soooo good, it's perfect for a winter snack but also great to package and give to friends!

Satisfyingly Seasoned Skillet Chicken. I made a p Satisfyingly Seasoned Skillet Chicken.

I made a perfectly seasoned skillet chicken dinner, and it felt unjust to not share the marinade/recipe with you. 

Why? 
Mainly because it was simple, fairly quick, doable on a weeknight, and satisfying both our palettes and bellies. I truly believe weeknight dinner wins are only fair to share. Am I right?

Recharging. It's sometimes overlooked and someti Recharging. 

It's sometimes overlooked and sometimes swept under the rug for a more convenient time. The truth is, if you need to recharge, reset, readjust, rejuvenate, reflect, or realign (any re)...you just know and need to do so. 

I don't take this lesson for granted. 

I can feel so heavily and deeply when I don't feel like I am being true, or myself, or can feel stressed or anxious...it feels disorganized and dishelved or something is not right. All I know is that it is up to ME to recreate that balance again. What I need to do that, well...it often results from doing a "re" activity. For me, this includes writing something (be in in a journal on a piece of paper or on here), getting out to enjoy a nice beverage or viewing a pleasant sight, and to reflect and re-evaluate what is going on, bothering me and then reset. 

Doing so often gives me clarity. 

I love the things I have learned during these past few months of reflections...I am excited and hopeful for the future, and I am recharged to tackle this week now...which is a shift from how I felt last week (full disclosure).

Do you love cooking? I do, in theory. I love the Do you love cooking?

I do, in theory. I love the creation of something delicious, not necessarily by following a recipe or logic...the  creation aspect, not the forced to dos. So when I read last week's Kitchen Notes by Helen Rosner ( @helenr ), "The Joylessness of Cooking" on The New Yorker, it hit me on the head. It was exactly what we have been feeling at home during the pandemic. 

The joy lays primarily in the mystery...the solving...the fun of it is being hands-deep in creating something that may or may not turn out (but it likely will if not experimenting new flavours). It involves using what you have on hand and creating something that fundamentally should work. 

That is the joy of cooking at home...at least for me. 

By the way, if you don't follow @helenr or read her column on the @newyorkermag and are a food writer/blogger, you are missing out for sure. Some good reads...I tell ya.

Peppermint Chocolate Cheesecake. Each year for t Peppermint Chocolate Cheesecake. 

Each year for the holidays I make a cheesecake recipe. So when Sonal @deargirlslovemom and I were deciding on a holiday themed dessert for this month's rendition of #SameSameButDifferent , cheesecake took the cake (haha see what I did there). 

For this cheesecake, I played around with a tried and tested recipe and mixed in some of my favourite holiday flavours: peppermint, chocolate and...cheesecake!
