This ricotta spinach dip recipe is super easy, super delicious and it’s actually good for you!
This recipe came up entirely by accident. I was actually making a pasta dish (click here to go to the ricotta and tomato pasta sauce recipe). While making the base for the pasta sauce, I had the idea to make a spinach dip. The aroma while cooking the sauce reminded me of a spinach dip I used to have at Kelsey’s.
I know no one knows that Kelsey’s is. It was a so-so restaurant in good ol’ Richmond, BC, where my friends and I would often meet up for lunch and snacks. We always got the spinach dip, a warm garlicky spinach dip, served with crunchy, freshly baked pita chips. Honestly, at that moment, I was taken back to Kelsey’s and had the idea to make a spinach dip that was comforting…but also, not as fatty and crappy for you, me, for us.
Without boring you with more back story though…here is the recipe for my ricotta spinach dip.
1/2 chopped red onion
3-4 finely chopped garlic cloves
1 cup freshly chopped spinach
1 teaspoon olive oil
1/2 cup of ricotta cheese
salt and pepper to taste
an extra tablespoon of extra virgin olive oil or avocado oil
- In a saucepan, add the olive oil, onions and garlic, and sautee, just until the onions are translucent.
- Add the spinach and continue to sautee until soft.
- Mix in the ricotta, add salt and pepper and mix well.
- Remove from the stove and let cool.
- Once cool add the oil of your choice, blend, and serve.
Serve with baked pita chips and enjoy!!
By the way, if you want to make your own pita chips, just take some whole wheat tortillas, cut into strips, add into a baking sheet, drizzle with avocado oil or olive oil, bake until crispy. These homemade chips make the PERFECT companion to this creamy spinach dip.
