No-Bake & No-Guilt Chocolate Oat Bars

Make these chocolate oat bars, and fill your sweet snack cravings.

My absolute favourite snack to purchase in any cafe are chocolate oat bars. The sweet and satisfying mixture of oat with chocolate, while also filling the hunger gap is sincerely perfection to me.

It is the epitome of what a snack is.

Having said that, I truly never know what I’m getting when I purchase one. Is it good for me? Is it full of sugar? Is it full of fats I can somewhat do without? How can I turn my favourite coffee time snack into something I feel I can enjoy guilt-free.

The answer is…simply make it yourself.

Now, I’m a lazy baker/cook. I don’t enjoy complicated recipes or spending hours making the perfect anything. I love being in the kitchen, however, like so many, I like easy recipes that anyone can do. It’s my thing.

So after a couple of botched trials, I landed on this easy to make, no-bake, oat bar recipe that I truly love.

I’ve also made it for family and friends and have been assured that they are, indeed, “the bomb.” (I have seriously dated myself by saying that…but oh well).

No-Bake Chocolate Oat Bars

Make these delicious chocolate oat bars to satisfy your snacking or sweet cravings. Freeze and have on hand for whenever you need them!

Equipment

  • plastic wrap or wax paper
  • square baking pan
  • sauce pan (or non-stick frying pan)
  • small food processor

Ingredients
  

Chocolate Topping

  • 1 cup semi-sweet chocoalte chips or cocoa chips
  • 1 tbsp milk of choice
  • 1 tsp margarine

Middle Layer

  • 1 tsp nut butter of choice
  • 8 medjool dates (pitted)

Granola Bar Layer

  • 1/2 cup milk of choice
  • 2 tbsp nut butter of choice
  • 1/2 tsp vanilla
  • 3 cups rolled oats
  • 2 tbsp dessicated unsweetened coconut optional
  • 1 tsp flax seeds
  • 1 tsp chia seeds
  • 1 tbsp cocoa powder optional (for extra chocolate taste)

Instructions
 

  • In a baking pan, line it with plastic wrap or wax paper, whatever is available to you (both will work)
  • Mix all ingredients for the granola bar layer together. Mix until sticky to touch.
  • Press the mixture into the pan, pack it in as even as possible.
  • Place in the fridge for one hour, while you get started on the next layer
  • In a blender or mini chopper, blend the dates with the nut butter to create a spread. Blend until spreadable (if needed add more nut butter).
  • Take the pan out of the fridge and spread the date layer evenly, it doesn't have to be perfect.
  • Place back in the fridge as you prepare the chocolate layer.
  • In a non-stick pan, add the chocolate topping ingredients and mix consistently on low heat.
  • Keep stirring until you have a smooth chocolate mixture (about 5 minutes), do not let burn.
  • Pour evenly over the oat bars.
  • Place back into the fridge until the chocoate has formed (about 15-20 minutues).
  • Remove from fridge, transfer out of the pan easily (remove the wrapping) and cut into even squares.
  • Enjoy!

Notes

This recipe must be kept in the fridge to avoid the chocolate melting. It can freeze easily and can be kept for up to 3 weeks.
