Who isn’t looking for a healthy snack these days? With the pressures of dieting, wanting to lose excess weight before the holidays or because of the holidays, or just because you enjoy healthy eating, there is always an interest in something that is good for you, easy to make, and most importantly…delicious.
Enter avocado crackers.
My hubs has been on a health bender since the beginning of 2019. Okay, it’s not a bender, but he’s really re-focused on healthy eating and exercise…as such, I have been trying to “get back to me” as well. That means really trying to eat and make healthful recipes again, and on the regular.
One of the things we have on hand, always, is avocados.
Now, if you are the same you know that avocadoes literally spoil the next day. Alright, I’m exaggerating, but sometimes it feels like it. Not being a “cheap” produce, it really hurts when that does happen. As such, we need to find a way to really use them in every which way. This recipe not only serves the purpose of a healthy and easy snack, but also saves the day when comes to them near spoiling.
Feta cheese (or any cheese will do, I like feta because of the salty contrast it gives)
Salt and pepper to taste
Note: I didn’t put exact amounts, because you can do this to taste.
Mix all ingredients together in a bowl.
On a baking sheet, lay your parchment paper.
Take a tablespoon amount of your mixture and add on the parchment paper.
Flatten with a spoon or spatula.
Bake at 325 until golden brown.
Let cool and eat with cheese, salsa, deli meat, or on its own.
